Choosing green coffee.

Start with species, processing and the cup profile you need. Grade and screen size describe aspects of physical preparation; they do not describe the complete flavour profile.

Share your roasting use and specification so the relevant options can be discussed.

An Indian green-coffee grade is part of the physical description, rather than a complete cup-quality or supply statement. Ask for the proposed lot identity and available assessment information. If you buy against an existing specification, include it so a proposal can be compared with the product you actually need.

Buyer questions

What should a green-coffee enquiry include?

State Arabica or Robusta, washed or natural processing, grade or physical preparation, approximate quantity and destination. Add crop year, moisture, defect-assessment and cup requirements where these form part of your buying specification.

How should a grade be compared?

Confirm the physical specification for the proposed lot. Grade and screen preparation do not replace a cup assessment; request the available lot and sample details before evaluating the coffee.
